Casserole of the Week - Beef Enchiladas

Every Thursday, I make a casserole.  I email it to my friends  - they decide if it appeals to them - if it does, they email me back and I make them one too!  Helps them, helps me! Anyway, I thought I would start sharing my recipes with you!  After all, why hold on to something yummy when you can share! 
Here Goes:
Ingredients:
1 lb ground beef
2 cups of rice - cooked in taco seasoning (I just use the packets or my homemade recipe found here.)
2 1/2 cups of Enchilada Sauce
4 cups Shredded Cheddar Cheese
8 Flour Tortillas (10")



Keep in mind, I'm making mine "to go" but the recipe makes 8.


Brown beef and drain.
Cook rice in taco seasoning
Assemble, top with enchilada sauce and cheese.
Not rocket science - but oh so yummy!
Bake at 350 for about 30 min til hot through.                             Enjoy!

The best chicken salad ever!

I was just over at www.listmama.com reading her list about why she prefers whole chickens, and I posted a comment about how I always cook my chicken in the crockpot. I guess I got inspired, so I decided to post my chicken salad recipe here. I have two, but one is a favorite of my mom and sister so I will give you that one.
As I start with a whole chicken and a crock pot. I do a rub under the skin of season salt and drop it in the crock pot with some water while I am at work. By the time I am home,it is falling off the bone!
Shred the chicken, stir in season salt (to taste) one cup of red grapes(I slice in half lenghth wise) 1/2 cup slivered almonds and 1/2 cup mayonnaise (sometimes more because... we just because I am from the south and mayonnaise makes everything better! So there!
Anyway... mix all together and there you have it. A wonderful go to chicken salad. I like to serve it on a croissant or maybe with a muffin. Any way you do it,is wonderful!

Thanksgiving Macaroni & Cheese

New recipe that I tried for Thanksgiving. Was really a hit.
Combine half and half, flour, Sharp Cheddar Cheese, Mozzarella Cheese, Parmesan Cheese, Whole Milk, butter, and pepper... really GOOD!
I just mixed it up, but i think next time I will top it with Parmesan and bread crumbs and stick it under the broiler for a few minutes to brown the top. It was really good. I will have to make it again to get the measurements down, but it was a keeper. Maybe my new go to mac and cheese!
