Lowfat Apple Crisp

Yesterday I felt adventurous. That, and I had lots of random ingredients I needed to use. Like.... a pie crust, 3 granny smith apples that were ripe, and some granola. So...voila, my lowfat apple crisp was born. It goes like this. Put the pie crust in your pie pan. I melted a little - by little - I mean 1tbs of butter and spread it on the bottom of the crust. Then I lightly sprinkled some brown sugar on the crust.


Next, I peeled and sliced my apples on a mandoline (for consistency in size) and spread them out in the pan. I was going for the whole beautiful circle you see in magazines when people are making these crisps or tarts, but I had help from my big girl, so mine is even more beautiful!


Then came a light drizzle of lemon juice, more butter - approx. 1 more tbs and more brown sugar.


Then a light (about 1/3 cup) topping of granola.


I baked at 350 for about 30 minutes and it turned out to be delicious. I served with low fat cool whip, but frozen yogurt or low fat icecream would have been even better. All and all it was fairly low in fat and calories per slice. And it turned out really well. Things I would have done differently: I wanted my granola softer so I baked the pie covered in foil. If you wanted it "crisp" hence the name - then Bake without. Also, I used two apples and should have used all three. Now I am stuck with one ripe granny smith and a "crisp" that could use a few more apples. All in all, I was really pleased. Recipe listed below: 3 Granny Smith apples - peeled and sliced 1 unbaked pie crust 2 tbs butter (divided) 1/3 cup brown sugar (divided) 2 tbs lemon juice 1/3 cup granola Preheat oven to 350 Line the pie shell in the pie plate. Brush with 1 tbs melted butter. Sprinkle 2 tbs of the brown sugar over the pie crust. Line with apples. Drizzle lemon juice over the apples. Top with remaining brown sugar and melted butter. Sprinkle 1/3 c. Granola over the top. Bake 350 for approx. 30 min. Enjoy! - Posted using BlogPress from my iPad

Coffee Filter Snowflakes




My baby girl experienced a little stir craziness...is that a word(s)? Anyway. She was a little bored and so we got busy with a classic craft - snowflakes made from coffee filters. These were a blast. She is 3 and still getting used to scissors, but with mama's help, they were a success.


We even took the scraps from the snowflakes and glued them on a black background to make what I affectionately call "snowflake night"





She loves glue, so obiviously, it was a smashing success.


Then of course, big sister - not to be out-done had to try her hand at them.


Tomorrow I think we will string them together to make a snowflake garland - or something. As a side note - yes, both my children were in their pajamas when these pictures were taken.
